As we've been publishing the Produce Blueprints November/December feature on convenience stores, I can't help but be a Texan about my favorite convenience store: Buc-ee's. 

Helping customers become accustomed to convenience stores as a place they go for fresh produce is not an easy proposition because it requires reshaping their habits.

Providing consumers with the type of fresh produce they can eat while on the go is one challenge that convenience store operators and their suppliers face.

Despite the positive numbers and outlook, convenience stores have not escaped the impact of the Covid-19 pandemic that hit much of the retail landscape hard.

While the pandemic overall has been dismal for many, some consumer habits that have changed and are being witnessed in grocery stores, may also take place in convenience stores.

Consumers are heading to their local convenience stores and not only filling their tanks but making purchases of fresh produce.
