What drive through Castroville, CA, would be complete without a visit to the Giant Artichoke?

CASTROVILLE, CA—I can remember the first time I saw someone cook an artichoke.

I was in my sophomore year at the University of Missouri and my experience with them up until then had been limited to canned and jarred artichoke hearts in salads. Growing up in rural Missouri meant a whole artichoke wasn’t exactly a staple.

My neighbor’s girlfriend steamed them, and I watched them both saw the tasty bits off the leaves with a fair amount of skepticism that all of the work was worth it.

I didn’t try making my own until well after I started working in the produce industry, and now they’re a favorite for both of my kids.

I was thrilled to get a chance to tour an artichoke harvest at Ocean Mist Farms BB #:111742, and am happy to share all that I’ve learned about artichokes in the process.
